Meatless Monday recipes

It’s Meatless Monday and my hubby cooked up some super easy, healthy and fast lunches for me over the weekend.  

First off, since I’m from Texas I could live off tacos and burritos.  He made me a couple of portobello mushroom vegan tacos that were so delicious I could have eaten four!  And here’s what he did that is different and so basic for those on the go and moms who need some easy ideas that their kids would love!  I can promise you don’t miss the meat, the portobello has a meaty texture and satisfies!
Red bell pepper and onion with a couple drizzles of olive oil.
Mushroom, sage and truffle oil.
Both of these combos of ingredients are placed on tinfoil(each line of ingredients written above has its own tin foil pack)  then wrapped and placed in oven.
Spinach and corn placed on a foil pan.
Cook all these in same oven at 400° for 20 minutes.
Spread refried beans on tortilla
Then add the above cooked ingredients to the tortilla.
On the side a little relish of jalapeño, tomatoes, cilantro, green onions, red wine vinegar  and salt.
Also photographed here is a cup of sour cream which can be deleted if you want to keep it vegan.

Recipe Two: Vegan Croquettes
Croquette One:
Hummus
Feta
Rice
Quinoa flakes
Parsley
Seasonings.
Panko bread crumbs.
We don’t really go by recipes so I would say use equal parts of everything, depending on how many you want to make. We made enough for one serving.  Once you mix the ingredients and form into balls, you roll around in the bread crumbs.
Croquette Two:
Cooked Lentils (al dente)
Quinoa
Kale
Portobello,diced
Carrots, grated
Onion, diced
Red pepper, diced
Garlic powder and garlic salt plus seasonings to taste.  Salt, pepper and cayenne are best.
Bake them all at 350° for 20 minutes or until browned and crispy on the outside.
Garnish
Lemon juice
Tomato
Jalapeño
Avocado slice
We placed two of the lentil croquettes and one of the hummus/rice croquette (although I could have eaten two) on a bed of Arugula with a drizzle of olive oil and sea salt.  I just love Tabasco too so I always drizzle a bit of that as well for an extra kick!IMG_0216

**we use organic/non GMO ingredients,  it is an option but a healthier one…
