Cold avocado mousse and three cheese quesadillas

 

We love to make soups at our house and try various different combinations.  In the summer it’s nice to have a cold soup sometimes, so here is our avocado soup(mousse).  We made a nice quesadilla on the side.   I suggest using organics and non gmo ingredients, of course…

2 Avocados

1 scoop cream cheese(about 2 tablespoons)

1/2 cup milk

Several dashes of lemon juice

Onion and garlic powders, salt and pepper.

Puree until smooth in a blender then chill for 1 hour.  I would suggest adding 1/4 cup of the milk at first then adding more to make it nice and smooth

Garnish with diced tomatoes and scallions.

 

Easy Quesadillas:

2 Tortillas

3 cheeses of your choice(we used Trader Joe’s extra sharp white cheddar, brie cheese triangles and their pepperjack)

1/4 thinly sliced Red Bell Pepper

1 green onion.

Spread the brie cheese on tortilla, then put the other cheese in slices on one half.   Add the sliced red pepper and green onion.  Any spices.

You could make a light sauce to put on top or dip, really blending anything works(cream cheese, tomatoes and cayenne pepper with a little milk works).

In this photo, we added the Trader Joe’s brie slices, salsa and cilantro on top.

You can also add anything extra you might like to the quesadillas(like cooked chicken, mushrooms, tomatoes, jalapenos and more…..)

Bake in oven until crispy(about 5-7 minutes).  Then cut into triangles and enjoy!
