Super Bowl Snacks: Vegan Cauliflower Bites
We are always looking for new ways to make healthy and delicious snacks to have at different events or parties. So for Super Bowl Sunday this year, hubby made some cauliflower bites that were so good we wish we had made more. The great thing about this recipe is that you can make a small or larger batch and either way they will go fast! If someone didn’t know better, it would seem like they’re eating popcorn shrimp!
This is amazingly easy to prepare and ready to serve in no time. You should really make these fresh, to serve soon after taking them out of the oven. This is not a gluten free recipe, however you can use quinoa flakes to bread crumbs and there you have it!
Recipe:
One head of cauliflower cut down to florets or one package already chopped cauliflower.
Toss cauliflower in a bowl in flour until covered well.
I separate bowl, mix 2 tbsp flaxseed to 1/2 cup warm water, let sit for 5 min (this is referred to as flax eggs, you can use this to replace egg in any recipe). If you do not have flaxseed, you can use egg as replacement. It would not be vegan of course 🙂
Toss in 2 tbsp breadcrumbs
Season with your favorite seasonings. We used garlic powder, salt, pepper and cayenne.
Place them on a foil sheet sprayed with a nonstick and on a baking sheet
High on heat for 12 min (until crispy).
Flip over then 12 minutes or so(until crispy).

Curry powder
Herbs
Mix well and place in a small bowl to serve with the bites.
