Taco Tuesdays: Cauliflower Tacos and Cauliflower Bites

I’m all about some taco Tuesdays, being an Austin raised girl and I love to change it up too.  There’s such a taco craze these days and many restaurants are now offering $4+ tacos, not all are that good but I’m a little picky, some are awesome and give us some great ideas when making at home!  So hubby made these delicious cauliflower bites and you can make a bunch of them to use for whatever you’d like.  We made a curried cashew cream sauce to dip in. Then we used the leftovers to make tacos or just eat on the side of something else for dinner.  We used Mission Organics tortillas, which we discovered that Mission offers organic options about 6 months ago and being a taco fanatic, we buy a pack of flour and a pack of corn almost weekly.  There’s very few organic tortillas out there(I’ve done a lot of research and tried many), these are the best around and I’m not getting paid or even free stuff to say this. There’s are the most tender tortillas I’ve had, don’t stick to each other,and are fully organic, non GMO which is amazing! They also have tortilla chips and whole wheat tortillas (which my local grocery store doesn’t carry yet, but I’m just happy they have the others!)

Here are the ingredients for the cauliflower bites and a couple pics of the bites and tacos. For the tacos, we added cashew cream (we are obsessed with making this to use on everything, both savory and sweet! More to come on this!), cilantro, diced onions, red bell pepper (you can sautee the onions and peppers in advance if you prefer), feta or farm style cheese and top with avocado. It’s so good, I could eat 5 of them!  Anyway,like I said just use the rest of cauliflower bites all week! Kids will love them too!

Ingredients:

Cauliflower
Toss in flour or non flour
Toss in flax egg
Bake in oven at 350º until crispy or even slightly burned  (at least 10-15 minutes—-just keep an eye on after 10 and shake them around)
