Super Bowl and Everyday Healthy Munchies

Normally for Super Bowl Sunday, my hubby traditionally makes a gumbo but since weren’t going to any parties and not fans of either team and he had already made the gumbo for the National Championship game we opted for a series of healthy munchies and dessert.  Our snacks turned out so delicious and filled us up, so was equivalent of a meal.  You can take meat out of the nachos, use vegan cheese and flax egg to replace those items and these snacks can be made vegan or vegetarian for any party or gathering!

We started out with:

Smoked Salmon on Cucumber edible plates. It’s so easy!

Smoked Salmon, Cream Cheese, Dill, Capers with a dash olive oil and sea salt.

Stuffed organic sweet pepper poppers

Cut in half.
Dice:
Onions
Jalapeño
Scoop into pepper halves

Top with a creamy cheese. Ie: port salut, cream cheese or a vegan cheese will work. We used Rougette, creamy Bavarian farm cheese
Chipotle and Sea salt sprinkled on tops
Freeze for 15 minutes.

Dip in flour then
Egg or flax egg (we used organic free range egg) then
Bread crumbs

Oven at 420° 20min

Cauliflower pierogis

Cold Cauliflower mash. Here is a recipe for cauliflower mash from a previous post. This time we used a garlic cashew cream(see my last recipe post) to replace the milk and cream cheese.

 Make a ball out of it, stuffing a piece of sharp, but creamy cheese (or a ball of shredded vegan cheese) in the center. Continue working the cauliflower mash ball around the cheese.
Then coat the same was as the poppers.

We used cashew cream instead of milk and cream cheese in our mash.

Organic Chicken Nachos

Baked chicken
Organic free range chicken.
Baked covered 2 hrs at 325
Marsala wine and vita frute.
Dry poblano peppers and rosemary on top.

For the nachos, we used this chicken and organic tortilla chips.
Chicken
Cheese
Jalapeño
Guacamole

5 Ingredient Chocolate Peanut Butter Cookies

Flax
Peanut butter
Cocoa
Vanilla
Agave

These turned out amazing! I had to stop myself from eating more than two!
