Meatless Monday and it’s Mushroom Veggie Burgers!

For this week’s Meatless Monday, hubby made some amazing mushroom patties for slider “burgers” and he is a meat eater still (I eat chicken, turkey and fish but try to eat vegan/vegetarian a few times a week at least). He will be the first to tell you that he did not miss the meat in this patty. And you can definitely cut out the bread crumbs, gluten in general plus use vegan cheese and it will be just as yummy!

Here are the ingredients for the burger and the garnishes he used:

Mushroom “Burger” Patties:

5 Mushrooms with 10 stems
Garlic clove
Poultry seasoning (sage, onion powder,garlic powder)
Cumin
Black pepper

Red wine to purée (just enough to purée) in blender or food processor 
Ends up with 2 cups of puréed mushroom mix.

1/4 cup flax seed
1 cup bread crumbs
1 cup cooked quinoa
1/4 cup pumpkin seeds.
Mix it all, season to taste
Patty
Broil high 5 on each side so it’s crispy on each side

Served with
Cottswald cheese
Avocado
Jalapeño
Sweet red pepper
Micro greens
Pesto truffle aioli
